Blacksmith and Armorer craft 80% of tank stuff (weapons and heavy armor).
Carpenter, Weaver and Leatherworker for the other 20%.
Goldsmith for pretty much all the accessories for any DoW/DoM class.
As for DoL (gatherers), definitely Miner for the ores (that you will need tons of) to craft ARM/BSM stuff.

In most cases I don't think you will ever need to meld materia to your gear since most of the end-game gears don't have slot for materia. In some rare cases when you need to meld one or two meteria (such as for relic weapon) you can always shout out loud in a city. Normally ppl will help with melding free of charge.
I know that FF community is very helpful and friendly but what do I need to do to meld my own materia?

The class needed to meld materia to an item is the same as the class needed to mend it - which appears on the item description. For WAR it will mainly be ARM and BSM for weapons and armour, with GSM for accessories. There's a quest to unlock melding once you get to the right DoH level.
As others have said, it is rarely worth melding DoW gear. Up to level 50 you replace your gear too quickly to make it worthwhile, whilst at 50 most gear does not allow melding.
The one case where it MAY be worthwhile to meld endgame WAR gear will be the accessories. VIT accessories loaded up with STR materia (or STR accessories loaded up with VIT) can be a powerful thing for WAR. While these accessories do have a much lower ilvl than non-meldable accessories, melded up they have two primary stats and one secondary, compared to the non-meldable items that have one primary stat and two secondaries.
If you want to meld your own accessories, you will need to level GSM.

I've designed my character to be self sufficient. My Miner* is 50 and melded. My BSM*, ARM*, and GSM are 50 and melded. The rest of my crafts are 50. (OK, As of right now, I'm still levelling CUL, I'm doing it with Ixal Dailies and it's 41. another couple weeks and it'll be 50). * = They also have Artisan Off hands. I'm wearing the HQ i90 gear (need to finish off my Mastercraft books for BSM and GSM before I can synth the new 4* gear.) but as you can see, I've crafted my left side gear.
I leave right side as drops to prove I can clear coil & Primal content. My char was BiS for 2.38. (Minus HA RoFending)
