Which ffxi job would you play in xiv?

This is already in the game. Just switch to White Mage and remove all healing spells but Cure I and Medica from your bar. Easy as pie.

Personnally i have a brain and i was able to play it with all its potencial and not only as a heal.

In xi you were able to buff/heal/debuff/dps and each summon had its own powers/skills and its utility in diffrent situations. Good for you if you are happy with xiv ones, it's not my case.
