What the hell, Shale Golem?!

You have plenty of time to use the item before you start attacking. Just don't hit it with an attack the second it spawns

I don't. It's still not what I'd call "plenty of time"

Almost every time I get one of these quests, it becomes an interrupt-fest just trying to get the item used. Definitely one of my most hated kind of quests. I don't see why the item can't just be used immediately like most other kinds of items, the 3-second usage time seems hella arbitrary and designed purely to be a pain in the ass, much like getting heavied by enemies while mounted.

Funny thing is how people seem to complain a lot about the beast tribe dailies where you have to go invisible or carry something through an area within a time limit... these quests I've never had any severe trouble with and never had to retry more than once.
