Stunning the mobs actually helps with healing. Stunned enemies do not attack anyone. Plus, Holy is freaking fun. Let the white mage worry about their MP.
Seriously, WHM gets yelled at if they DPS and if they dont' DPS...
And Holy is one of the few AoE stuns out there. Usually a good 3-5 holies once I get a chance helps with making the damage a bit more stable and helps with speeding up the fight. I might need a little bit of extra time to recover my mp after the fight, but usually we end up saving more time than we lose. As for less than three mobs... It really depends on the mob. I generally won't, but while it isn't mana efficient to use holy on a single target, it is still a fairly high damage attack.
It is similar to why I'll tell do large pulls as a warrior even without aoe. I just spam overpower a bit with some damage buffs and force the healer to do some major healing for a bit. I need a few seconds to recover my TP after, but generally those runs are shorter than trying to do the entire dungeon normally.
As for the mana battery thing, I don't really think like that, though I will joke around with BRDs that I know well enough about how "yay, a mana battery!" Similarly, I often joke about how the tank's "HP Battery" is ready to go.
In all honesty, for the most part, I don't change what I do by much just because a BRD is in the party. Now, if the BRD happens to be running Mage's Ballad, I'll change things up a little since if it is there, might as well use it.
I've also had BRDs (two in the same party) refuse to use MB (when they weren't using any song). They were like: manage your MP better. Issue was? I was managing my MP as best as I could. It just happened that the tank needed that many cure 2s and the party needed that many big aoe heals. That was how fast the hp was dropping. (Granted, when one of your party member's excuse for having no armor or accessories equipped is that they never got any, but they are class changed.... Makes me wonder.)
I understand OPs concern but it comes down to everyone can only be responsible for themselves. If all players are able to do their job as well as assisting in other areas, then why not let them? I've taken over healing when the healer was out of commission for whatever reason and while it wasn't as good, we survived and I didn't get any flack from it. Should be no different the other way around.
Whatley, in all honestly a WHM should ask for it, if you see their mana dropping to about 1200 and they still havent popped Shroud I would throw it up just to be safe.

Eh, I'm a WHM main but I have to agree with the OP about not using it against one mob.
I don't see it very often, but when I see a WHM using Holy against Titan for example, it makes me want to rage!
But on two or more mobs, go nuts! We have quite possibly the best AOE damage in game, rivaled only buy double/triple Flares. Use it, abuse it!
You just have to decide if the WHM is spamming holy if playing the ballad is a net gain, or a net loss, for the group.
This sounds a bit like people not debuffing because it is wasting a cool down they could DD with.
But, anyone who abuses holy to the point that ballad is actually needed to heal the group deserves to have their healer card ripped up.
I encountered this in AK the other night. Whm used holy on everything moving even single mobs, not one Aero or stone or anything. Then they were out of mana so the bard finally just left ballad up pretty much the whole dungeon. Every pack of mobs took forever to kill...
Don't get me wrong, when I play whm and it makes sense to do some damage I do but I always make sure I have the MP to heal up the party and I cast all my offensive spells in a way that makes actual sense.
