It's really not that terrible. There is a multitude of things you can do while you wait for the queue to pop.

People with Collector's Edition mounts can't use said mounts until they unlock their Chocobo. The reason you see low-levels on CE mounts is because they've already done the hard yards on another class.

Why do people care so much about these sidequests? They're there as filler as you level. They also have some little sidestory bits for those who like to read. Unfortunately, there just isn't the time or space to make every side-quest a unique encounter with some kind of boss mob or instance. This isn't Skyrim, this is a game that has thousands of people playing it at the same time all of the time. I for one enjoy the little stupid side-quests. Especially considering how quickly I can finish most of them. That's a major plus for me as in older MMORPGs after you've ground your way up to X level, you unlock quests that ask for more grinding. Say, slay X monster to attain X amount of wobbly bits, but those quest items only drop at a 1/4 rate so you're smashing monsters for an hour to get the damn things. SE clearly did the right thing in making sidequests relatively easy, despite them being little more than filler.
