Full ilvl90 and Gryphonskin is 8365 with party buff and food. I get 517 VIT in this setup, but I'm a Wildwood Elezen, so you can get an extra +5 VIT on top of what I have.

What's your STR sitting on ? I did the math and I should have about 450STR by the time I have full i90. Thats like 30-40 behide a full i90 Melee DPS class o.O.

Your maths is a bit out... I get 424 STR in full i90 armour and Gryphonskin, with party buff. No STR buff from food unfortunately. You could potentially get an extra 4 (or minus 2) from your race choice.

EDIT: I am VIT spec (30 VIT). If you put all 30 into STR, you could potentially get to 459

To be exact, It added up to 446. I will run the numbers again to be sure. I'm Highlander Hume, which have highest based STR in game.
