Immersion isn't based on how closely tied to reality the gameworld is. Immersion is a state of mind where you always want to keep going, no matter what. If you've ever played a game for hours on end because you kept telling yourself "Just one more level", or "After this next boss", or "Once I reach a save point", or anything to that effect, then you were immersed in that game. The presence or non-presence of a feature, or that birds float or hover rather than sitting and resting when they aren't moving, and other acceptable breaks from reality, is inconsequential to whether or not a game provides immersion for its audience.
