I don't know about you, but most people who go play MMO's don't go in with the expectation of becoming gatherers/crafters/farmers.
The scope of combat class design and rewards and encounter design far overshadows the assets dedicated to crafting/gathering systems. I can think of MMO's with little crafting/gathering/economy play.
I cannot think of MMO's without combat content. Because the market is overwhelmingly skewed for it.
So don't go pretending like crafting/gathering is an equal alternative to an audience that mostly joins the game for the combat/storyline.
Crafting isn't even content considering you do the same thing to level all crafting classes. You get HQ items, produce HQ goods and turn them in for big exp. You slap some gear on at 50 and do the same thing, except you turn it in to players instead of an NPC.
Executing Coil takes significantly more effort and involvement than doing the same rote rotation of skills a HQ equipped crafter does. My Goldsmith's HQ rotation is pretty simple. All it takes is farming HQ mats.
For people who join this game for interesting combat content, all they have is Coil. That's it. And even coil is cutting it close considering how easy Turn 1-4 is. 4 only begins to get sort of challenging, but nothing on WoW levels of encounter design.

Key word here being MOST rather than ALL. Do not make the mistake of thinking that because it is not important to the majority that it is entirely irrelevant. It adds something to the game, granted it may not be as much as battle content, but we do not know what may become of these classes; they may play a far bigger role than we now see.
If you do not want to do these jobs you do not have to, but you are (by your own decision) removing content that is there. Yes the game is a bit shallow for everything at this point, but it's two months in so why not try some other content. Some of this may become more relevant in later patches or expansions.
Ok that's great but the money will soon dry out when everyone and there sister is max everything
As it stands now I can go in any city and find a crafter literally 12 of them sitting next to each other grinding away next to the market board seeing such great content at there little stations and the logs
I guess if i need something crafted i deff won't have a hard time finding someone since the only thing people can argue about is ---

The mass drones of crafters/gathers will come to an end when everybody maxes everything
In short how many leather workers does an fc need 100 and I guess an fc need 75 goldsmiths as well

It isn't so much that it's shallow. It's sneaky.
All roads lead to grind.
Level 5 tier in Weaver achievement 3000 Synthesis. 30 stacks of Felt, easy enough. That's only 6000 Fleece, 3000 snurble tufts, 15,000 Lightening shards, 15,000 Wind shards.
Suddenly 30 stacks of felt is 6 months of mash and grind.
That's just one example. The game is full of these escalating grind scams.
My favorite part of this entire thread? People that seem to think FFXIV is the only MMO to contain:
-Grinding
-60-80 of the same craft in one Guild/Free Company/Linkshell
-Gear sets that make people look identical
-Lockouts
I want to read more, please.
