Shouldn't different mounts have different speeds (or other similar attributes)?

Simple solution to mount speed killing diversity: have the speed tied to your character stats that you can either upgrade through quest and/or whatever.

I was thinking exactly this when I read this thread. Just make it tied to the character and problem solved.

The first thing I thought when I unlocked my chocobo in beta was "this feels remarkably slow"
