Tanks have a lot of luxuries. They can leave whenever they want because a new group is merely 10 minutes away. They know DD have a 40-90 minute queue, and honestly it gives tanks a lot of power.

This also means that they have the luxury of just going until they get a group that is situate properly for them to be carried through the dungeon.

If you don't like it, roll a tank yourself.

That said it's also easy to tank as a tank, even in sub par gear.

Do any current tanks have a preference either way?

The second one works well unless someone does something to generate hate, such as heal before the mobs are slept.
Only bad tanks want you to wait to sleep. Any tank even remotely worth his salt will be using Flash which doesn't wake mobs up, and even if a mob gets away if a tank is remotely aware of the situation, they can pick it up before it hits someone more than twice.

I think the "optimum" way to do a pull is to have the tank pull it with a ranged skill, then flash as they approach, then flash a second time while you are casting sleep. This will make sure that sleep isn't broken, and he has sufficient threat on them that they won't be hard to pick up when sleep wears off.

But as mentioned above tanks can afford to be primadonnas, so in order to appease them it's best to ask them what they prefer beforehand. Some are stupid enough to not want you to sleep. Hopefully they get rid of that attitude before Brayflox.
