I'm impressed with how someone can type so much yet say so little. Its apparent that this game or genre will never be what you would like it to be. There are a few games that might pique your interest like the hardcore modes on Diablo 2/3. I honestly dont know how any MMO could ever live up to the standards you are asking for. They just arent that kind of game.

I'm surprised that you can read so much, and yet understand so little.

I love the game, I love the story that drives our characters BUT I do NOT like the story behind the jobs. (White Mage, Black Mage, etc.) It felt rushed, shallow, and contrived. I can't really make it any clearer than that.
