I'd like to have a handful or really fun minigames. Some type of card game, some form of chocobo racing, and some type of strategy game would be really neat.

I would love it. And make it mean something to be good at it (OG FFX Blitzball is to easy to be good at, for a MMO) i.e. LS vs. LS tournaments that could give rewards useful in the "real" game of some sort.

A new cardgame that is neither FFVIII or FFIX but something new that would challenge your thinking a bit could be fun and start that collecting obsession I know offline FF games gave me (countless hours getting the best cards in FFVIII, just for the sake of DA BESTESTS CARDZ, not unlikely endgame gear opsession lol.).
It would be ten times the fun winning a good thought out card game over a LS buddy, then and unimportant NPC. While they don't let us players fight and duel with each other for fun, this could be good for those bragging rights.

Yes other systems should be improved on in the game first (Content, New Job system etc.), but some new, fun and rewarding minigame would be a blast in a game that sometime leaves you with not much to do.
