    Yeah, I wouldn't mind if it's all NPC driven and you just choose the colors you want and pay x amount of gil. It'd be a decent gil sink.

    This would be ideal.

    Changing the colors of your gear on a whim just by going into your menu would be a bad idea.

    Perhaps even keep the markets involved by having to purchase/farm your dye, trade to NPC who will then dye your gear.
