I'm pretty sure the rule was that you couldn't use their assets - as in making copypasta of their already existing work and calling it yours. That would invalidate the purpose of having a contest at all - someone could just photoshop their inventory icons around and poof! new ring with no effort!
Once you submit a ring for the contest, that design becomes property of Square Enix, whether they use the ring or not. Once you click "Send," it's theirs - they might as well have drawn it; you have no rights. They can't make that acquisition if they already own what you're submitting - and it's a violation of copyright law to try at all. Trademark symbolism is a little different.
They have nothing to worry about if it uses a moogle or a chocobo - they already own them. You won't be profiting from their creations, they will - it just has to be original work created for the contest. Hell, under those rules even my custom phoenix would be suspect for using "too similar qualities," as inspiration was taken from several generations of Final Fantasy phoenixes combined into one.
Long and short - I think you're fine as long as you didn't just drag their existing assets around (which, to be fair, the first ring you mention did do in part of their design - and they admitted to such and were fine with it being DQ'd if it had to be).
It would be pretty lame for Square Enix to say "FINAL FANTASY CONTEST!"
