3 vit is equivalent to 2 def, but vit also slightly decreases damage taken from magic while def does not.

Edit: just to add, Vit is also your secondary damage modifier on War. Ideally should aim to hit damage cap at ~300-310 vit then focus on other things as you get return on multiple areas with vit up to that point.
