You can only kill a certain amount of mobs at once, and keep in mind UV has a 110s cd unless he's "abusing things" but im not going to get on those details.Building enmity would only work for boss FATEs that are alive long enough, the problem OP is having is that BLU can basically instakill mobs in regular FATEs.
However, if you claim a FATE mob (its name turns red if you claimed it and purple if someone else did) you get full credit for the kill no matter what. It usually only takes a few claimed mobs to get gold. Any job with an instant attack or AoE would be preferable, just try to claim stuff and pull it into the BLU death zone.
Just go to other areas, there's several to look out for!

I've been having better luck in undesirable areas (mostly avoiding all of Gridania), mostly in Thanalan.
So you think that people playing Blue Mage, are intentionally disrupting FATE gameplay? I'm not sure you know what griefing actually means. People just want their rewards. They aren't out to disrupt other people. If you want to complain about Blue Mage scaling, ok, but that is a developer issue. Not a community one.
Blu has almost no purpose as it is. Let them have this one.
And honestly everything you say that isn't a solution is indeed actual solutions. You just don't like them is all. Doesn't make them not a solution.
People need to learn that BLU has utility in the game and should be encouraged to level it themselves.
People complained last time during Yokai and they either learned to love the overpoweredness of BLU or they just got it done on not-day-1 once less people were doing FATEs.

I encountered difficulties during the last Yokai event when I couldn't accumulate enough credit. At that time, I hadn't leveled my BLU job, which admittedly added a significant amount of stress. While I've since leveled BLU for this event, I empathize with OP's perspective, having been in a similar situation.

This event has always been hot garbage, group up -not all get items, go solo- items randomly drop like very low drops.
