As someone who has been watching anime in its various forms for the last 30 years ... it's just you. Well, it's probably that your introduction to Japanese anime and Chinese donghua has been a bit, um, tilted? Perhaps mostly kid-oriented anime?

I do not consider Yu-Gi-Oh! Duel Monsters to be the epitome of Japanese anime over the last 20-odd years.

Is there a lot of junk out there? Yes. You need to expand your source material, and figure out if you really enjoy Shónen anime geared to 9-18 year old boys. I expect you'd be more into Seinen anime these days. For your own sake, lay off the kodomo-muke anime types (Pokemon, Doraemon, Digimon, etc).
