It's prolly a stretch to say this since your still doing the casual modes but as a player within that bracket of a midcore player and I thought grinding out for the Rival Wings mount or the Seal Rock Commander Coat by doing callouts was pretty good.

Also on the subject of just the game overall, Criterion would've been perfect place to have midcore content with how accessible it's design is inherently. But they decided to make the fights as hard as some extreme/savage/early ultimate phases and reward you with a peasants meal in terms of reward quality. Literally the biggest waste of dev time out of all the content this expansion has had.
I think more game modes is one of the things that would defnitely help pvp more.

We have CC as an easy-to-get mode (both ranked and casual), but boy after a while the mode gets a bit stale. It would help if the maps had more interesting layouts instead of similar grids with different gimmicks, but ultimately the best thing for diversity would be leaving CC's design as it is and add a new 5x5 mode.

Then we have the Frontlines, which is a whole different beast that is not very loved because of how chaotic and imbalanced it can be. Idk if they can fix that without giving specific 'Frontline Kits' or actions only usable in Frontlines to the jobs.

In short, it needs more modes. Bring back the Feast re-designed, or do the Battle Royale idea for blue mages, or a 1x1 / 2x2 / 3x3 arena tournament. They can even use the Ul'dah Coliseum for that.
