It's the art style lol, don't tell anyone that Zidane is officially the same height as Cloud.

I mean, freya is 187cm tall which puts her at the same height as a max height highlander.
That puts her at 9cm smaller than the smallest hrothgar, or equal to an above average height female viera (around 66 on the scale)
definatly not huge in any regards compared to hrothgar, and a much less bulkier form.
Probably because everybody looks short in the game's art style. When standing right next to Zidane and not in the background she is clearly taller, but everyone still has a very intentionally squat and deformed appearance.
Here's the actual height comparison for reference.

It's taken them over two expansions just to complete the last two races. I'd prefer another original race like the Au Ra anyway.
All the rats were killed by Odin, sorry furries, or covid spreaders as I like to call them.

I'd say it's probably due to FFIX's more cartoonish art style. It's basically resulted in people having a hard time approximating the actual height of a lot of the characters and races in the title.
I can't imagine them ever adding another race after the fallout from Hroth/Viera.
But I honestly would have loved to see Bermecians. FF9 is possibly my favorite FF game, and I always thought the Bermecians were so cool. Unique but very interesting with a cool aesthetic and culture. We'll never ever see them in anything else, probably, but if there was one race that we could have added to FFXIV, Burmecians would be at the top of my list.
EDIT:
Wait, is this true?
Because in games they're in together like Dissidia, isn't Zidane shorter?
To be fair, not counting her helmet, she's not too much taller, is she?

They're both officially 173cm (5'8"). If Zidane seems shorter in Dissidia, then it's a stylistic choice because he comes from a game where everyone looks shrunken.
Zidane is also only 16 years old while Cloud is 21, though he was in the juice from 16-21 which probably stunted his potential growth.
The height chart posted above shows Freya's height at 187.9cm, which is almost 6'2". She's 5-6 inches taller than Zidane.
Burmecians are in Viera territory in height but every single time they pop up in a FFXIV race thread, they get compared to Lalafell. But considering Viera look more like some of the FFTA art where they have human hands and feet and not FFXII's version, a similar thing would happen here which would basically erase half of what's special about them besides having a large snout and ears. I wasn't a fan of the FFXI races being ported in and even though I'm a huge Ivalice fan and played those more than the other FF games, I'm not a fan of Viera being ported in either. I'd prefer more original content and besides, if they were anything like Hrothgar then there won't be as many good options for faces and every single one would basically look the same as the others.
I lament the overall reluctance for modern MMOs to have more...distinctly inhuman playable races.
Though I suppose that's partly it takes more effort to design gear in a game with non-standardizard character models.

I don't think we were supposed to get these exceptionally handsomely named people in ff14 as playable. So, I don't really mourn lack of them.
I admit that in perfect world, where vieras have hats and hrothgars can change their hairstyle as normal, having ALL the races would be pretty cool.
But that's not the dimension we live in so tough luck.
I have made peace with no more new races. Developing even one seems to suck so much resources I genuinely like to see that skill and creativity to be used for playable content. I have made peace even with possibility that the hats and hairstyles will never be properly fixed.
