Tried PSO2:NGS, realized it's not an MMO, but a glorified gacha platform.
Waiting for Blue Protocol, although I fear it may just be another PSO2.
More recently I've found non-MMOs to be a good complement to FFXIV. Been busy building my factory on an alien planet. It has been a lot more fun than crafting in FFXIV.
“There is nothing noble in being superior to your fellow man; true nobility is being superior to your former self.”

If you want an MMO with the ULTIMATE Character Creator...
City of Heroes Homecoming.
It's an older MMO and was discontinued ( Not because of lack of interest but because the company just...stopped ) but the private server is alive and well. It gets frequent updates too. Actually I might jump back into it myself.
When you deal with human beings, never count on logic or consistency.
Fluid like water. Smooth like silk. Pepperoni like pizza.

Guild Wars 2, definitely. I wouldn't really want to play two MMOs at the same time, but FFXIV and GW2 really do different things, they don't feel like the same type of game at all.
It's too bad you reject Elder Scrolls Online, as it's a really cool game actually. I get how you feel about the art style though. I feel like the Elder Scrolls series in general tries really hard to make its characters super ugly, and I don't know why. Still put hundreds of hours into Skyrim though. In fact, you know what you should do? Play Skyrim with some graphics mods to make the people prettier. It's a good time! Also get the Inigo mod so you can have a loveable catboi follow you around.

Kinda ironic that the modding community turn Skyrim into a game that has the best looking characters of all western RPG, and I dare say that probably is still true these day.

GW2 is definitely a good try. There's also, um... Genshin. I don't really like endorsing gacha games but if you find the "anime" style enjoyable it might be your thing. SWtoR is sleepy, but the story can be fun.

I've been playing FFXI recently again after some time away, it's been nice. It's definitely not for everyone though, it's older and much slower. Great story though, one of my faves. ShB was very much a mix of Zilart and Promathia in terms of story, if that grabs you at all.
Otherwise outside of that, I occasionally play LOTRO when I get the urge to go live in Middle Earth, happens a few times a year at least lol. It's been a while since I played SWTOR, but I have played that as well. Both are f2p but not p2w; LOTRO you can get points pretty quickly and I think SWTOR is similar. Nice housing tho, both are easy to get.
