Adds are a very important mechanic when done well. It prevents the situation in which a single tank can effectively do the task of 3. Especialy when there are many adds, the other tanks are there to take the focus. Without these mechanics the 2 other tanks are just a dps with emnity option.

They also do help at variety. Since you arent looking at a single boss all the time.

I even think there are not enough fights where proper adds are done. Too many fights only need 1 tank and a 2nd one as a potential backup when the first one makes a mistake (which rarely happens unless the tank is new and insta kills are involved).
