It's simple, really. They (likely) can't selectively choose which jobs might get a "hide job gauge" option, it would have to be available for every job. And, rather than risk clueless players disabling them without knowing what they are or what they're for on a job that actually benefits from them, leaving them playing said jobs half blind, they simply don't give any job that option.

Basically, players that feel they do not want or need particular job gauges are inconvenienced less than hypothetical players that might turn off something crucial.
