And secondly, there's a few other nods to FFVIII though enemy models and animations. Voidwalker is in fact a recreation (and reimagining) of the Elvoret/Elnoyle boss/monster from VIII, and the model for Eden's Promise (I don't think you mentioned this but I may have missed it) is heavily based on Ultimecia's final form, right down to sharing many of the same spell/ability animations. Not a huge deal to have missed them, but they're cool details for the more perceptive FFVIII fas.
From what we're told, the role of Fandaniel is 'the pursuit of extant phenomena'. Basically, it's his job to understand the weather, magnetic fields (which were figured out by the Fandaniel before Hermes), stuff like that. Which is part of why Hermes knowing dynamis was important; as Fandaniel, he would've had to be on top of stuff like that anyway. Hermes just happens to also be good at birds as a separate thing, like how Lahabrea apparently had a talent for fire-aspected creatures.

As to the models, I did hear the Voidwalker one before, but it ultimately got the cut because it's just an unrelated 'hey, that's neat' fact. Eden's Promise being Ultimecia-esque is new to me, and I kinda see it in its head shape, but when doing research the main thing for that boss is being based on the statue of Artemis, which is a pretty clear basis for the rest of the design.
