If I solo from 1-200 and don't die at all, do I get all the achievements (solo to 50, solo to 100, solo to 200)?

Yes. You get the respective achievement for recording a score at floor X or above. And to record a score you have to end a run either through dying or reaching floor 200.

PotD is an oddity because it does skip the second solo achievement if you reach 200 (the first achievement was attained upon clearing floor 100). As other posts have mentioned you can die beyond 101 and receive credit for it in spite of the wording. HoH's 51+ achievement seems to address this.
