Ifrit was a good start, but the current engine/servers (action lock/lag ) made it annoying...
This. They tried to make a dynamic fight but it got marred by the game's faulty server/engine.

So they decided to stick to basics this time around. I don't blame them either. These 2 new dungeons are basically crowd pleasing content fillers. Nothing wrong with that.

I doubt we'll see anything truly dynamic until the 2.0 engine is released.
