The Thai red curry paste is a big shortcut if you can find it in the stores.

And use regular coconut milk, not light, otherwise the sauce might come out too watery.

I did something pretty similar to this, but I used a totally different vegetable profile since my husband has the palette of a toddler and won't eat broccoli or carrots. I used onion and green peppers in addition to the red peppers, instead.
