Considering to play through the EW msq with paladin just for roleplay purposes. But I've already done DRK for ShB and feel a bit tedious questing with tanks. Undying, sure, but so do the mobs I fought against.

It's hard to say. I'm not sure any fit 'better' than paladin but honestly their reasoning for picking pld versus the actual quests the job got don't really line up super well. It's more the visuals of paladin as a defender I guess that have it make sense.
Given the heavy Sharlayan/Summoning themes in Endwalker, I'd say Scholar/Summoner might be an interesting choice (plus with the Summoner re-work, the job promises to be a fun one to play)
Samurai, Ninja, Red Mage, Reaper or Dragoon.
WoL needs to be NIN in 7.0.

I only tried the 1.0 beta back in the ways so never really played the game.
But isn't that what the original poster boy was back in 1.0?
So to quote a line from the Endwalker launch trailer:
Every beginning has an end.
The beginning would be the beginning of FFXIV journey henche the original poster boy job (in original job armor) and where the End is the Endwalker expansion, the end of an era.

Since endwalker has that heavy FF IV theme Summoner( would be the best bet.
Second would be dragoon(Villan of the week/Big Show level Face/Heel turn: Kaine), third would be (spoony) Bard.
Honorable mention Monk and Ninja.
I'd consider Reaper to be a good option. Aside from being new, a key theme of recent expansions has been that Light does not always equal 'good' and Dark does not always equal 'evil'. I'm fully expecting and hoping for that to play into the MSQ's to a large degree.
Any of the casters would be nice, though Reaper for the above reason, too.
