You can use a macro to assign different glamours to the same set.

/micon x gearset
/gearset change x y

x = your gear set number
y = glamour plate number

You actually don't need to use a macro. If you open up the "Gear Set List" on the character tab, right-click on the job you want to glam up, and then you can assign a set right from there. Glams will break if you're changing jobs outside of a city, but it's currently better than nothing. :X

And to add to this, would love to be able to create/apply glams anywhere in game.
