As far as I am aware the game does not have official DS5 support, it only supports DS4. The only way you will get it to work properly is to use DS4Windows, or Steams built in support (you will need to run the game through steam though.) The game will register the controller as a XBOX 360 controller, but it will work perfectly and you can just put the button prompts to Playstation buttons in the settings.

EDIT: If you do not own the Steam version you can still add the game as a non-steam game and use the full functionality of steams DS5 support.

    >I have also tried to use Non-Steam games overlay and it just causes the PS5 Controller to not work at all rather than just bugged.

Already done this actually and it doesn't work. Just tried the DS4 tool as well, same result, doesn't work-- doesn't even register even wired in for the tool.

I thought the FFXIVteam said they would be supporting PS5 products for the game? Game runs on the PS5 from what I heard but I guess that is just backwards compatibility mode. Hopefully the FFXIVteam and look at officially supporting the controller for PC-- its flat out baffling how different the compatibility for the Duel Sense controller is VS the Duel Shock 4-- PS4 controller has more support on PC than the PS5 one out of the box.

Hopefully a proper solution can be found soon, I'd love to hear something from the FFXIVteam itself in this regard as I know I am not the only one wanting to use the PS5 controller on PC, especially for FFXIV

So far as I know, that key there is "would be", as in there wasn't a specific date specified. So far as I know, yes, they will be supporting PS5 (and PS5 peripherals). But it wouldn't entirely surprise me if there wasn't official DualSense controller support until there's a proper, official PS5 native client (rather than just running the PS4 one in backwards compatibility mode).

As noted, though, swapping around the input IDs in the controller configuration should work in the meantime, though it will get reverted by various changes so may need to be periodically reapplied. The Steam overlay should work too, but there are a couple of gotchas... and if you don't have the 'Playstation Controller Configuration' option ticked—which you might only be able get to from the configuration screen in Big Picture mode—it will just fail to work at all.

(And I'm not 100% certain the current release build of Steam supports DualSense via the overlay, as opposed to the beta build channel of Steam which I can confirm does; I've tested with a DualSense and the beta builds. One of those two—the Playstation Controller Configuration option or the release-vs-beta builds—might be the underlying problem for Steam not mapping it for you.)
