I can see why they don't if only because the number of potential Bahamuts could blot out the sun
Also, I don't know about you, but it feels like they weren't able to balance SMNs damage around it's absence. I never feel like I contribute when I go SMN.

In general, in FFXIV pet gameplay really sucks. Specifically, the control sucks: it's sluggish, not gamepad friendly, and compounds on the ehhhh targeting of FFXIV.
If you look at an MMO or other genres like MOBAs, pet classes usually have a lot of potential. Usually pet healing by the master is very efficient, encouraging you to use them for harassment or putting pressure on healers or something. In general there's a lot of fun gameplay that can only work with pet classes by having a persistent entity detached from the host, like, say, damaging everything between pet and master, or have the pet attack everything from its current position to another, or an AOE around the pet.
Sadly FFXIV pet control has to be immensely improved for this to feel compelling in PvE, nevermind PvP. As it stands, in PvE it feels like a glorified DoT/HoT, and in the case of SCH you often just feels like you are doing the same thing another job can do but with a 3 sec delay. I hope they improve how pets work in FFXIV; warlock was my favourite PvP class in WoW and pet micro was part of the thrill. Until then I appreciate that they gave up on them in PvP. Maybe next expansion they'll rework pets again.
