I think I get the set-up. Its actually super organized if I'm right.
Left-most cluster is the aoe stuff and out of combat button.
Center cluster has the bread and butter single target stuff on the upper half and utility stuff on lower.
Upper right cluster is the miscellaneous things
Lower right cluster is everything that doesn't need pressed every GCD but still used regularly.
The way everything is organized is super tidy and organized based on priority by cluster from left to right. At least that's what I see lol. Could be totally wrong though.
Easy, I don't "find" things, I place them where I expect them using my Razer Tartarus v2

(6-0) <AOE DPS
(- =) <Main procs
Ctrl + (1-5) <BUffs
Ctrl +(6-9) <Movement
Ctrl +0 <Sprint
Shft + (1-5) <Debuffs
Shft +(6-0) < Big Proc
Alt + (1-5) <Role&duty
Above bags <Food, Mounts, Compainion, Minion, toys
Lower Right <Teleports more mounts & toys
Top Right <Jobs

I think I'm more bothered by how ridiculously empty your inventory is. XD
I make full use of my Retainers, have paid additional Retainers. And only keep what I need on my person.
oh here is a better example of how I mouse and Keyboard.
p.s. I use this same set up in WOW. If I logged into WOW My Bartender would be exactly the same. Although it's set up to look like my Older Razer keypad two rows of 5 columns with a row of two buttons under. I've had that set up since the Belkin n52.
Well since I'm still paid... although I am basically quite now.
Compare the Same set up mostly.
Yes my Warlock's name is Mary... Mary Hell, while my FFXIV main is Mary Jigoku, which means Hell in Japanese. Same Character RP wise. :P

I'm on a Playstation pro so controller is all I know. I even type with one. No KB here. I can't picture playing this with a KB.. wouldn't your hands start to hurt? D:
Also.. how do you set up class changes on a hotbar?

The videos are boring, and I'm not the master OMG player. And my voice is like a catfight. But you can see how I set it all up for Mouse and Keyboard.
I play with a Logitech G700s and a Koolertron programmable keypad:
I also have my mount on one of the mouse side buttons. This allows me to have only one shifted key, and a few left over, all within reach.
The on-screen bar layout matches the keypad as much as possible, but with two key rows mashed into one bar to reduce the height.
I also made various-shaped bumps on important keys with Sugru, so I can feel where they are.

I'm also using a Keyboard + Mouse set up. I'm using a Microsoft Ergo 4000 Keyboard, so no fancy additional keys but a standard ergonomic layout. Next to that, i'm using a Logitech G502 mouse, where i've bound the "auto walk" and "push to talk" actions under specific Mouse buttons (on the side of the mouse).
Since I'm using a regular keyboard layout, i had to come up with a hotbar layout, where i could mostly use my left hand in order to reach most of the actions i needed to use. This is what i came up with:
Above you see the hotbar layout of my White Mage. Since i can reach the numeric keys 1 through 6, i split each hotbar into 2 section. The left side are assigned to the numeric keys 1 through 6 and the right side are assigned to 7 through =. Since that would only work for 1 hotbar, i've assigned control keys, creating shortcut keys. For instance CTRL 1 through 6 and ALT 1 through 6.
After experimenting a lot with different layouts, this is what i ended up using:
