You kinda answered your own question. There aren't any pet jobs anymore. So they're not going to add 'real' pets back in again now after writing them out of the existing pet jobs.
A Limited Job is our only hope of a Beastmaster now, take it or leave it.

I'm not sure this makes sense? Just because they moved a job into a certain direction, doesn't mean they don't want that previous thing to exist. Hell, they could have moved them from having a pet, so they can add a more pet centric job without stepping on their toes.

Also, why would they remove pets? FF14 would be one of the only (if not only) modern day MMO that can't handle pets, if you were going to say "Strain the server".

It's not server problems, so much that Yoshi-P has admitted in the past that the dev team doesn't know how to balance/design around pets in the long run. Plus, they wanted to make Pet jobs easier to handle.
I still think they could do pet jobs but not like how they were pre-ShB (which I'm not too upset over).
