Adding even more ways to get easy scrips is not gonna be good for the economy considering all the items you can buy with scrips.
eg. Look at how the materia markets have played out over patches because SE keeps adding more ways to get materia.
If it were says 10 white scrips per quest that'd be 210 scrips per week. Hardly economy breaking and in line with the 5 phanta we currently get from pixies. Not exactly the most time efficient option but a fun way to supplement other sources. Rowenas house of splendors is probably still faster and farmable.
As it currently stands I have zero reason to do Qitari quests now that I've maxed out their reputation and gotten both minions and the mount. I enjoyed the quests but now it just feels like a waste of time as I'm getting nothing of value for it. Dwarf quests are likely to feel equally pointless once I've finished their story and that feels sad.
Meanwhile I'm still doing pixie quests multiple days a week despite have everything at 80 as it cuts down the amount of roulettes I need each week.
Even if they were 10 per quest, we need to consider that even the low pop NA servers have at least ~1000 crafters/gatherers. In conjunction with Custom Deliveries, Rowena's and Adventure Squad scrip farming, that's gonna be a lot of scrips for hardly any effort.
I rather the Qitari/Dwarves give unique rewards/mats like how the Namzu do.
I can get 10k scrip at any time any day because turn ins are unlimited and I can constantly drain them with materials. It will not make a difference when you can make big meme GP gear+food and harvest for an hour, node after node and have more than anyone would need.
This requires active effort.

I think people underestimate what a small increase to 'passive' ways of earning scrips multiplied by number of crafters/gatherers on a server can do the scrip economy.
Is there any reason you're against the Qitari/Dwarves rewarding crafting/gathering mats and unique rewards instead?
