For many players across all servers, spawning S ranks is a core gameplay loop in FF14.
Hunters, you could call them I suppose.
As I hunter, I personally enjoy chipping away towards S ranks that are available to spawn when I have time, sometimes with my friends.
We spawn, relay, slay and then wait for the shiny rare monster's next spawn cycle.
The several day wait is an integral part of the spawning process remaining enjoyable for me.
If any S rank could spawn every day, that would not only make the rare mobs feel far less special but it would disrupt the balance of working towards the S rank achievements.
Take the aforementioned Udumbara for example: it's spawn condition requires 100 Leshys and 100 Diakkas to be killed.
Pretty taxing effort, no?
On the opposing side of the Spectrum, let's look at the S rank for the peaks - Bone Crawler.
Spawning it requires the chocobo porter to be rode in the area.
This can be accomplished in mere moments by barely even paying attention.
Some S ranks are far easier to spawn than others, and I feel S has achieved an intricate balance in regards to working towards S rank achievements.
After the easy ones have been killed, hunters can work towards spawning the more taxing S ranks, all we wait for the next cycle so we may be ever closer to earning those coveted achievements.
Personally, I... just like spawning S ranks and become thrilled when I successfully spawn and see one.
I love taking the time to 'host' rare content that numerous players can reap the rewards of, even if I may end up waiting days for an opportunity to do so.
I also find the S rank monsters fascinating - rarely seen monsters that only live for minutes after someone worked to make them appear, yet living much in the memories of people who spent great deals of time to spawn them.
Having all S ranks spawn on a daily basis would utterly destroy my attachment to the hunt as an activity and I would likely just subsequently quit the entire game.
If I wanted to work towards spawning monsters that could pop up multiple times a day, I'd dive into Eureka 0:

Well you have to check if its even available to spawn in the first place...
If you dont even want to put in the effort to spawn them, without doing research on HOW and WHEN they can spawn, you dont have much of a basis to complain when ultimately you're not the one trying to spawn them - If you were serious about it, you wouldnt just go out and kill 100 mobs because a random on the forums told you to - Talk to people in the hunt community and work with them to spawn them.
I honestly kind of wish the game rewarded people for actually being the ones to spawn a given hunt. As things currently stand, there's little reason to be actively involved in spawning the S ranks unless you find it entertaining (Which I do) or to ensure you don't miss out on it.
I tend to just wait until the S ranks with more tedious spawn conditions are maxed or almost maxed out on their timers to avoid such frustration.
I do think the spawn conditions/rates for certain hunts should be tweaked a bit, though, particularly the ones spawned by treasure maps. The amount of multi-layered RNG on those is a bit outrageous.
If you feel like you're wasting your time, don't do it. There's plenty of other content and plenty of other achievements to go after. Others who don't see it as a waste of their time will continue to spawn the S ranks.
This argument is brought up for almost anything. Do we just hand everything that isn't a complex test of skill on a plate to everyone? It's ok for things to take time, patience and dedication.
(Edit: Ah, just noticed your tome weapon thread. Basically you do want everything time gated handed to you on a plate).
Join a few S rank linkshells and you'll have it soon enough.

That's not what happened. I did the research, I put the effort in and I got screwed over. Then I went to sleep and when I woke up the mob was dead again. That's because you didn't pray RNGesus enough. He don't care about the efforts made, like when you are the one carrying an entire raid and gets nothing at the end, while all the players who were dying again and again gets all the drops. Even with the respawn timer at 90%, you still have one chance out of ten to pop nothing. I have seen this with quite a few Ixtab (300 ronka mobs to kill).
That being said you did answer your question yourself by saying "if you want to keep them rare, fine". They wouldn't be rare anymore if they were spawning every hour to fit with your sleeping/school/work hours, do they ? XD
