WHERE IS THIS KETTLE EVERYONE KEEPS INTRODUCING ME TO?
How is it petty to undercut by 1 gil? People generally do that to maintain prices. If you undercut by 1% on a 500,000 item. You're lowering the price by 5,000. If everyone followed that same mindset, the market will inevitably crash depending on its popularity. I'd rather someone undercut me by 1 gil or any low amount. I stand to make more if I sell my item first.

Meanwhile, I have my item for 2 weeks on motherboard and gone in one night. Prior to that yes people still undercut me.
If I wanna undercut, it goes for 20-30% and by then if anyone else undercut me, yeah good luck with yer profits
If someones 1 gil undercut affects your sales, it means there isn't enough demand for said item and you should either wait for demand to increase or lower the prices.
I would rather see someone undercutting me by 1 gil than tank entire price down by 90% because 2 morons happen to have undercutting war...
For items that are basically trash such as leveling equipment or common furniture worth less than 10k I usually undercut by 10-20%. I just want to get rid of the thing fast and figure that if someone finds the item useful enough to pay for it that's better than me selling it to a vendor. Also if I see from the history that there has been no sales for weeks, the asking price is obviously too high and I'll set a drastically lower one. For more valuable items for which I expect there to be demand I'm more careful and only undercut by around 1% in order to not drive prices down too much.
Most MMOs unfortunately just don't have working economies. Volumes are too low, players are too rich and demand is far too spiky. Prices for an item may steadily decline for a week, then someone buy half the available supply and the lowest price will be 5x what it was. All crafting materials can be easily gathered or bought from vendors so it's not readily apparent how much the materials themselves are worth. It doesn't help that the market tools are so clunky. FFXIV is better than most with the history view. But so far EVE Online is the only game I've seen with a really working economy and good builtin tools for analyzing prices.

I price based on what I feel the item is worth to me. If the current low price seems reasonable, I'm going to price match. If it seems too low based on past experience I'll price mine higher and wait a little longer for the higher profit, or I'll not list that item and switch to something else. If the current low price seems too high, I'll price my item lower to what I feel is reasonable.
Undercut me for 1 gil or 1000 gil. I don't care. Mine will still sell if I've set a reasonable price and there is demand. If my item isn't selling, it's more likely because I misjudged the market than because you undercut me.
For items that sell in large quantities, simply selling stacks of less and making sure to restock often is a good way to get back at 'em.
When I go to the MB and need 5 glamour prisms, I want to buy 5, not 99.
People who think the same way buy my stacks of 5, instead of buying from the undercutter who has stacks of 99.
I never buy the cheaper one if it's a 1g undercut lol. I'm sure someone will soon after, but that someone isn't me. It's just annoying.
And if I have to relist a slow moving item that someone 1g undercut I usually start to gut the price on it. Like I'd answer 74,999 with 60,000.
I don't need gil badly enough to play that game I just want this out of my bag for more than vendor/desynth price - all goods priced to move.
This too but it's not something I actively check, just if I happen to notice it.
