If you're talking about crafting, yeah it's super easy to cap it atm. The recommended way of leveling a crafter is through Ishgard Restoration (which is collectables, basically, but they have their own mats you gotta gather), but you can do leves, too.
Ishgard Restoration. Not only is it good exp, you can also earn access to some mounts, glamor gear, emotes, etc with the tokens you get for turning in. Like Nioh said, it's similar to collectibles.

And yes, to answer your question, Ishgard is the new deal as stated by the others above. But even without it, it's still a breeze anyway. They have made leveling... well, and crafting in general... super easy since Stormblood.
For someone like you, it won't take you long to figure out the adjustments you need to excel in the new system. The relatively new buttons that you can't miss out and need to immediately utilize these days include: Reflect, Prudent Touch & Delicate Synthesis. Hasty Touch is a relic now. Don't bother with it. Manipulation has gone through at least two generation of changes, and is currently the major source of durab recovery. Waste Not is just as good as it was, and is now utilized together with Manip to deal with 35 or 40 durab items when using Delicate Syn. For the rest, I'll let you discover for yourself.

I recommend Ishgard restoration for the leveling, since they raised EXP increases for crafting/gathering to like 500%. Leves also give quite a big boost in EXP now.
As for crafting in general, you’re going to be quite disappointed in how easy it’s become...just letting you know now. i highly don’t recommend being too enthusiastic about it now, if what you’re looking for is something difficult. crafting has really gone downhill ever since you stopped playing, around Stormblood to be more specific.

I'd say that if you have money, the best way is leves since they x3 the XP from them... but Ishgard Restoration is a great way too, maybe cheaper and you can earn some mats and items too !
