I love the look of Gunbreaker, and FF8 was always my favorite of the entire series. I really wanted to play it, but there was something really off about it, i couldn't put my finger on what that was till i was sitting there watching the animations, i went back to old FF8 clips and realized it was the fact it was a 1 hand fighter instead of the iconic 2h fighitng.

I was legitimately disappointed because the feel of the weapon isnt represented in the animations, it looks more like a single bladed/dagger cliche swing, than something that really carries weight.
I was actually pretty happy when i realized it was Seifer's stance but i was disappointed that it wasnt the Squall strikes that i really fell in love with.

I remember as a kid in my woodworking class i attempted to make a gunblade out of wood, i got the outline correct but always messed up on the barrel lol.

It never had that much weight; it just took finesse to wield because of it not being like a standard sword, it was swift like gunblades should be. Check footage of Lightning and Squall, all of Squall's renzokuken combos, Lightning's attacks, Seifer's even, they're all swift, not heavy greatswords. That's cute for your childhood, I also bought Squall's gunblade in a random shop that you can actually pull the trigger on and make the revolver part work. I love this job and how it feels, its satisfying and its FF14's interpretation of it, just how everything else in this game is added. DRK isn't even using a spear like Cecil but people still love DRK's everything. RDM got a rapier and crystal, never seen that before. Again, your childhood is clouding the reality, developers have time/money, they made a good job, they shouldn't bother tweaking it for a very few minority because they can't get over their childhood, it already has enough of FF8 focus in it. FF14 made a creative take on it and it works perfectly, go play FF8 if you want FF8. Go play Dissidia for a bit if you want to be Squall. This is a job for a large group of players playing gunbreaker, not just you, not just Squall, not just those who played FF8.

    https://www.youtube.com/watch?v=1G6p4W5cMXg shows much heavier blows
for the one youre suggesting the attacks are one handed and i will go as far as say maybe thats what the developer was truly going for if the concept of Dissidia is canon. Which i can accept if it was.

However this still isnt solidified, so the original is something that is a bit more dominant. Something that most fans remember. I will not attempt to speak for all as there are younger ones who love the character but may not have played the original.
