Well lore wise, those could be invasive species. And because they are growing in areas they don't normally do, the pests and creatures that normally eat them aren't there so they grow up to a much more useful size for us. So Coerthan Carrots that grow in Coerthas might not be that great to harvest, but the ones that are growing in Thanalan are.
