I haven't noticed any special squishiness, but I also blew a ton of Poetics to get augmented gear at 60 and 70, so that's probably part of it.

okay thanks everybody. I guess I just need to practice more with the Dancer. Just don't quite have the hang of it yet.
Did you do all that in Shadowbringers?Nope completed both extremes dozens of times, done all the story, do FATEs and it's fine. I have saved my own party rather than me dying because of my shield and heals. Also use your role heal if you need to. I see no problem with dancer (survivability) once you get used to the gigantic finisher aoe size.
It could be that Stormblood mobs are hitting particularly hard or something.
I am at the exact same point in the game as OP as a dancer and the death frequency to just normal mobs wandering around strikes me as more than a gear up or learn to play issue. I'd expect to die to powerful mobs or groups of them when still new to a job but just one or two?
I leveled dancer through dungeons and FATE's pre ShB (still did FATEs in shb). As for mobs or FATE's if I do end up getting hit hard I can just dash away and reset them or just leave the area of the FATE. I don't think I ever actually died to mobs, well I probably did so I don't want to say that. It would have happened so rarely I literally cannot remember. I think I used my machinist's shire gear when I started leveling my Dancer day one. Didn't really upgrade it too much inbetween, or rather, I got the levels so fast I also cannot remember. At 70 I had my bard's melded gear 390 something ilvl.

255 gear is given to you when unlocking the job and that's all I have since the character I am doing this on was a Black Mage/Summoner previously.
Make sure you're not missing any gear. The 255 stuff you get when you unlock Dancer is mostly good enough for 60-62, but it's missing about half your total slots (no jewelry or belt, iirc) and the weapon is NQ Crafted instead of HQ Crafted, meaning it's much weaker than it ought to be.
I leveled my dancer just fine, however I'd like to point out that every little bit of extra stats matter. So keep an eye on your gear and more importantly your weapon. Sometimes the reason you die isn't really because the mobs are too strong, but because you're not doing the damage you're supposed to and the fight lasts longer than what would have been safe. Every time I started to struggle against mobs it was because I didn't had a proper weapon for it.
My gear is over 255, but at lvl 63, I did find that I was still weirdly squishy. Hopefully it gets better XD
Yeaaah, even with the same gear as my bard, I noticed DNC was somehow squishier, but I don't think I ever died as DNC in open world. I used the cooldowns, like the shields, heals, and even a potion if I need it and keep rotating them/using them as they pop up as needed. I think it's basically a glass cannon class, which I don't mind.
I won't be coming back to FFXIV's forums. The forum vibe is way too venomous and brings out the worst in me. I don't like who I am on the forums, so it's best to distance myself.
Don't forget to bring your Chocobo with you when leveling. Makes life easy.
