Wouldn't it be counterproductive to protecting the wood if male viera mortality rate was ridiculously high? If it was that bad, you'd think they would change their ways for the sake of the wood.
It scarcely matters in the end. The lore is just there as a cover to explain why we don't see them for now. But in terms of being a permanent impediment on them being playable? It's not intended to be and is not being invoked to do that, since their letter on the topic explained what the actual impediment was.
Until you stumble on them being as rarefied as WHM - a role the WoL can take up - it's a non-argument.

It was outright stated by our only source of male viera in the game but if you choose to be selectively ignorant of anything in game that doesn’t support your views, then sure, whatever.
Even if they have a ridiculously high mortality rate - those that have survived are the apex predator. They're either ultimate survivalists - or Viera who were born outside of the wood and became such a thing.
I think people should also keep in mind that they have a life expectancy of 300+ years, so the males who do survive are likely still able to live to a ripe old age. And that the males breed once every three years - and we don't know if they just have one mate or have a 'harem' of females they have to deal with at the time. That's a lot of children, most of all - that's a lot of females who are able to birth males and another generation of young female Viera who can do so in the future when they hit maturity.
tldr; men who survive crap like that do not die easily.

I say "assume" because it was never given as a direct comparison to male mooncats, whose mortality rates we don't know much about. We don't know the birth rates for either race, and in the end, it's a weak argument, because SE is not invoking it to block their addition, and we can already play rarer things.
It's less about me being ignorant and more that the argument does not wash.

Just to make it clear, there are no guarantees we will be seeing them in the game. I don't want people out here thinking I think what Yoshida said was confirmation of getting male viera or female hrothgar.
I think rather than lore being the reason male viera and female hrothgar are not playable (because the WoL is a unique character), is mostly because of developmental issues.
are we back to the lore argument again? it doesn't hold any water since the game already disregards story/plot developments in favor of gameplay. see: the finale of ARR and being able to enter uldah as if nothing happened
