Actually this should also apply to DotL classes too. They have special unique Artifact gear at the level caps 50.60 and 70 like DotH and combat jobs, but otherwise they also share the same gear. Even at level cap they have gear that can be worn by all gatherers, and if materia is melded to them properly they are better then the unique gear as well.
It's basically the same as combat jobs. Except for job specific gear designed to give those jobs a specific look, all similar jobs can share. Tanks can share all the tank gear, casters all the caster gear, etc. Crafters share all the crafting gear, gatherers share all the gathering gear. Except for those sets that are effectively identical except for how they look, to give each one an iconic presence.
It varies, actually.
White gear has always been generic, with the exception of the MH and OH tools.
Scrip gear tends (blue scrip leveling gear being an exception) to be class-specific.
Some of the in-era high end crafted sets are class-specific. The current top end gear is generic, but there was a time in HW where it was class-specific.
