It most likely depends on whether they have an ear-length slider or not.

It seems that the same actual setting is used for muscle definition (Hyur/Roegadyn), ear length (Elezen/Lalafell) or tail length (Miqo'te/Au Ra) - so Viera will almost certainly get one or the other, but not both.
