Depending at the pace you want to reach end content and how you like to play you can do a few things, for example what I do with those is sell them BUT I don't mind collecting a few pieces of gear from a dungeon / use my tokens to get something too. If you want the fast and strong, just grabbing the proper MSQ rewards would help.

Keep in mind though as a tank gear is a bit more important than if you were a DD. If you know your job as a DD and play well you'll probably do just as well or slightly better than those who have good gear but just play very badly lol. As a tank the gear, especially when you get near expansion level points, can come with a lot of defense and stats to help you keep enmity on enemies.

If you plan on leveling multiple jobs up you can track which gear you get and think to yourself "do I want to level up another job in the same group as that?" if yes you can keep it in your retainer or armory and come back around for it. You can store quite a few items so you don't need to worry too early but at a certain point if you have like level 10-70 gear for three different role types you have no more space in your retainers lol. So it could be helpful to pick the good gear from the quests for a role type you enjoy, and then level the other jobs up occasionally following your main job (so you can get rid of or glamour prism your gear). Glamour dresser/prism system being how you can store gear you like to look at. If you don't want to keep it for looks like that, consider either turning it into seals at your GC for rank ups/retainer tokens and such, or into materia (but if it's not DoL/DoH it probably wont sell for much).

As a tank you have very low queue times so sometimes what can be helpful is using the MSQ to level up a job that needs all that exp but doesn't have low queue times (like DD), and then you can grind out levels using the dungeons as well as the daily leveling roulette and story roulette (huge exp bonus once a day) for your tank pretty easily. Healers also have low queue times, but I feel tanks usually go faster (but it's not a huge difference compared to some queues for DD).

Of course it depends on if you plan on leveling many jobs, what roles, and such.. so if you only want to play tanks then getting the tank gear and doing it through MSQ makes a lot of sense. Afterwards you can level the other tanks with the gear you've collected in dungeons really easily.

Some other things to consider for leveling:
    • Beastmen tribe quests are generally very low pressure on your own time repeatable (every day) quests (with some tokens that can reward nice things), also for crafters/gatherers once you get to the point you can do them it can be a slow but easy way to level them up. For DoL/DoH you have Ixali beast tribe, Moogle Tribe (only crafter I think), and Namazu.
    • Daily Roullete can be very powerful, the leveling, raid, and MSQ offer large amounts of exp (MSQ you can't skip cutscenes though so prepare for about an hour).
    • PvP can offer exp and you can rank up your pvp status to purchase new glamour items (gear, animations, minions, hair)
    • Squadron can be a great way to level up DD but some dungeons will be a giant pain depending on what job you go as and what rank your squad mates are at (it's good, just a few dungeons or moments where it's rough)
    • Deep dungeons let you try out jobs and level pretty quickly, so if you wanted to know what skills X job has and generally what they may look/feel like it's a good place to go. Just keep in mind it's not going to be a perfect example lol, most people play much looser in there. Good exp though.

If it's fairly ordinary gear that's easily obtainable again (which most quest rewards are), and it's going to be quite a while before your other class/job reaches the right level for it, then it's probably easier to just take a reward to sell, even if that means buying something back again later when your alt job gets to that point.

But if your alt job is nearly there, and you'll be wanting it soon, or if it's a particularly good piece and hard to get (the later more likely for dungeon drops than quest rewards), then it might be worth taking something you can't use yet and holding on to it until you can.

Oh, and if you decide to just take something to sell, that doesn't necessarily have to mean the gil pouch reward. The Allagan Pieces are a quick way to get some gil since they sell for a good price to NPC vendors, and a sure way since it doesn't depend on the vagaries of the market, but quite often a gear reward will get you more gil if you sell it on the marketboard.
