How about we don't and say we did?Rather than having female Viera and male Hrothgar, why not just keep the existing body models, but give us variety in facial design and chest size?
Let people define their character's gender for themselves instead of defining it for them.
Don't list the gender for either race.
Have some masculine-esque facial choices for Viera
And some feminine-esque facial choices for Hrothgar
And add hair options that allow players to make male-looking or female-looking characters of each race.
This solves the "lack of resources" problem.
But also gives players the flexibility to play as whatever gender or identity they prefer.
It might require a bit of tweaking gear-wise (e.g. chests for viera), but at least it will give people more flexibility in how they play the game.
More flexibility and choice is always good (not SJW propaganda).
And lore can be updated to have both races as gender neutral (males and females are culturally similar in body-type and clothing).
And/or to have viera/hrothgar quests about non-binary life choices (in a respectful way).
It's very empathetic of you to call someone's existence a "view point" and to call someone sensitive when they talk about being harassed or bullied for their gender. Well, for a part the problems comes from vocabulary and... gender apparence at first sight. You can't blame people to consider a man as a man or a woman as a woman at first sight because the person they meet looks to have this gender at first sight. The trouble appears after between gender (in mind), gender (in apparence), sex and finally sexuality.
The first reaction, because of the common average majority (at least in apparence), is to consider the whole as one thing.
I will talk as a straight hetero who feel without any doubt as a male who love women anf feel attracted by women as far as my memory can go back : nonbinary (or gay or lesbains etc.) is hard to imagine. Not because people refuse it but because we simply don't and can't feel things that way. It is NOT education, I FEEL hetero as far as my memory can go back.
The missunderstanding can (and do) come from both side. Some current activists since three years sound totally hysterical as if they have lost their mind, they don't ask some kind of... normality, they ask for some kind of revenge against hetero world. If people over-react blame the activists too.
You know, if people start to consider they fight, it means they have enemies, the problem they don't understand, is this behavior can lead them to rise grudge against them and then, they will create new enemies. And that's the reason why I absolutly categorically refuse to follow all kind of activists claimings.

I don’t see anyone refusing to acknowledge the non-binary so much as they don’t want to deal with it. This is a video game after all and thus not real. If someone has a pronoun they like to be called in rl that’s fine, but stop shoving it in people’s face in a dungeon or raid run. I happen to be a gay male, does it mean I have to go screaming that in ul dah? No because it doesn’t matter, because my rl isn’t inserted into a mmo character. A fine idea, but a tecnical mess to execute, you'd have to adjust everything, from skeletons, character models, armor/glamor models to animations and even more we can't dream about.
