You seem to be confusing male/female and masculine/feminine - or possibly "modern Western" masculinity for the only possible variety.

All the player races (except possibly Lalafell) have clearly male characters that can be customised towards a masculine or feminine style, depending on your taste. There's more than one type of masculine appearance - it's not just the bulky muscular types that have a "male aesthetic" - there can be slender elegant males or small wiry males (cat ears optional) or anything inbetween.

I have a male Elezen alt, and he doesn't look female to me at all. Somewhat feminine, on a sliding scale of gender, but still with a "maleness" to it for lack of a beter word.

We absolutely have a better genderless pronoun than "it" or the terribly awkard "s/he": singular "they". It's not new and it's probably not as strange as it sounds - I certainly use it all the time in Internet discussions, if I'm referring to another poster, instead of using he/she if I don't know which is correct.

I've used both that and the "generic he" mentioned in that article sometimes, but both usage can get confusing. At other times, I don't mind spelling out "he or she" and "him or herself" sometimes, though still awkward. Any of those options I think is better than "s/he" unless in the context of just an informal short hand notation.
