I'd advise against Razer and Alienware because they are overpriced so much. All laptop brand are overpriced but these 2 higher.

MSI and Asus have a lot of configs and you may also go look for an Acer, the Acer is 'most of the times' cheaper.

There aren't many gaming laptops with I5, most are I7 but this is not something you should watch for when you specifically search for gaming laptops as the CPU's in those are good enough.
If you want to play XIV on maximum settings and with 1080P/60 I'd advice to get a 1070, if you can't find any within your budget go for the 1060 but make sure you get the 6Gb vram one.
As for ram 8Gb is enough for this game and the stuff you've summed up but 16Gb will be more future proof, in most laptops though you can always upgrade the ram later so look in the specs/info pages to how much ram that is supported.

There's AMD variants which are 'sometimes' cheaper but there aren't that many AMD gaming laptops.

Anything lower won't run the game on maximum settings with 1080P/60.

I don't know where you're from but maybe there might be some Black Friday deals or x-mass deals. The 20xx GPU series laptops will also be releasing sometime although many are speculating Nvidia is still artificially limiting those to try and sell more of the already existing 10xx series for higher price.
Anyway, when those 20xx laptops do release there 'might' be a drop in price of the 10xx laptops although it might still take a while.
