Did you forget Stormblood already? A new race means lore (content) for that race and potentially quests (content) involving them. It also adds more variety to the world, thus enhancing content all around. Au Ra were behind a paywall; you had to buy the expansion. Lore is only one thing out of the list.
If I want to be a Viera then I want to be a Viera, not an Elezen with bunny ears on top. I want unique features, emotes, animations. No imagination is going to help you when the race you're playing is obviously not what you want.
