Can't speak to BRD/MCH but I would say DRG is hard to optimize and mainly for the sheer fact I forget to use Mirage Dive after Jump/Spineshatter. MNK is good and I enjoy the flow but the expansion abilities feel bolted on in comparison to the other melee classes. I feel MNK suffers the most depending on the boss. Lakshmi was the hardest boss for me to keep my GL3 stacks and getting them back takes a long time in comparison to the refresh rate of any of the other melee classes.
i am a sam/monk main and i disagree with this for sure. Perhaps it is because of me being used to raiding, but Sam is the easiest melee job ive played in this game to date (i do average 5k in most parties, tipping highher if crits/dh are good that run) and i still think its a very basic job.
So long as you are A keeping your dot up, B, not clipping your sen (which is easy to NOT do) and C, not sitting on 100 kenki/missing TOO many positionals. Then its pretty butter from there. sure there are minor little things you can do to min max your dps that much more, like open eyes usage, knowing when to use hagakure or midare (if trick/any moderate dmg boost is up, and you have three sen, deciding which to use in that moment) etc, things like that, but its really not going to impact you too greatly. Sam is easy to pick up, easy to do good dps, and easy to do great dps. mastering the job is simple and perfecting the job is more about knowing the fight rather than knowing the samurai.
No offense to you, as you are obviously still learning, but when you get up there, and dont mess up on mechanics and it becomes muscle memory, you will see how easy it really is at the top.
I would easily put it as one of the easiest jobs in the game, maybe a bit harder than tank rotatinos and redmage. but definantly one of the easiest imo

Bard, Dragoon, Ninja, and then maybe Summoner and Machinist seem the most desired DPS. Red Mage joins the list in high-movement fights where instant rezes will be useful, especially if in a physical-dominant comp.
In my opinion, Samurai and Dragoon are among the hardest, but in a dummy fight, most of that complexity boils down to rote memorization. Ninja runs an interesting line between feeling smooth (aside from Duality's CD with the new 3rd-tier Shadow Fang) while still having a fair bit of nuance, and Bard isn't quite as simple as it looks.
Samurai is the easiest job in this game. (its not a random answer, I know it very well, logs)
At high level, i mean, if you want to play at 95%+ percentile, hardest jobs are maybe:
Melee; DRG and NIN.
Rangeds; BLM and MCH.
If you dont care about high performance, all jobs are easy. Jobs turn into something hard when you want to squeeze 110%.
Actually meta looks like: (demand)
Melee; NIN+DRG (Best melee comp)
Ranged; SMN+BRD/MCH (Good comp for prog) or BRD + MCH (good comp for speed kills)

I would say mch. It is really strong job, really good damage utility and damage reduction utility, but it is still least played job in savage content. I think reason behind that is because it is lot harder play than other jobs. SMN was least played job before, but after they get damage buff, popularity raised lot so I guess it was just weak before and thats why ppl did not wanted play it before.
Most desired dps jobs: BRD, DRG, NIN, MCH.
I can't speak for DRG and NIN since I don't play them.
MCH and BRD are almost equal in terms of dps if played very well. However, a poorly played MCH does more dps than a poorly played BRD.
Example to compare their dps:
O4S normal kill:
- MCH dps: 4,376
- BRD dps: 4,224
O4S speed kill:
- MCH dps: 5,097
- BRD dps: 4,897
Whoever has RNG on their side will do better.
You can see from the numbers that their dps is fairly close, with 100-200 difference due to RNG.

Agreed. But pre-mirage dive I would weave jump/spineshatter depending on which one I did first and my muscle memory from even 2.0 I still weave one and miss the mirage dive and overwrite the Dive Ready status with another Dive Ready. So by immediate I was more referring to me overwriting.
Yeah, proc are important. In MCH for ex, when I'm trying the O4S dummy, I've done it one time 30s remaining and the other times that was around 20s, just because I've a good RNG.Most desired dps jobs: BRD, DRG, NIN, MCH.

My answer about the OP's question is: most challenging and wanted is different a lot. NIN is not particulary hard except for timing TA, but is surely the most wanted job because of that. MCH is way the hardest dps imo, in all point, but because he had Hypercharge, it is at the same levelo of the NIN for "wanted job".
