So, here's what I would like to see, based on the fact that DoW is tank/DPS only, and DoM is healer/DPS only:
Disciple of War healer (bear in mind PLD is a DoW and can use a healing spell, and damage spell too, so the foundation is laid). Focused around TP for its sustained healing, with burst coming from MP. I'm thinking Dancer would be a good candidate for this. People are saying "Can't have it exclusively TP", so how about this as a potential idea, a way to covert x amount of MP and y amount of TP. No cooldown (except GCD), but perhaps with a cast time? You can now throw more TP based abilities into the mix.
Disciple of Magic tank. Jury's out on what would be a good spot for that, so shoot out ideas please.
This I feel would help round things out and give DoW only or DoM only roleplayers, a way to be all roles. Plus, I think it could help break some barriers down, and a DoW healer just excites me to no end.

As I'm sure you are well aware, it takes more than one person to be able to kick a player from a duty, so in all those instances there were at least two people agreeing they'd be better off without you tanking.

Fair point, I'm just REALLY wanting my Dancer. Was hoping for it in Stormblood and didn't get it. That really made me and one of my ex friends really sad. That's why I'm pushing for Dancer. Chemist would be a great one to add after Dancer if you ask me. I'd love for tanks to start being made DoM and healers DoW, to help balance the books out.

Funny you mention a Disciple of Magic Tank because currently I'm working on just that. For Necromancer.
Wow Dancer sure is popular...but I agree whole heartedly Dancer is the third class in my 4 Class Gift to FFXIV. However I'm keeping my last one a secret since it hasn't been requested yet. Anyways its all well and nice to ask for classes but another to actually try to figure out the work and mechanics yourselves. If anyone is interested in helping me could you please tell me. I'm trying to put a team together so it goes faster in execution. If interested just let me know.

It's mostly because A) Everyone expects BLU to be in the next expansion. B) We got two DPS classes in Stormblood, so the assumption is that we'll get a tank and healer in 5.0. Between the two, people feel BLU fits better as a tank.
That's just straight up not true. Blue Mages in FFXI could be tanks, with the right set up, and BLU characters like Quistis or Kimahri could be made into tanks as well.
Blue Mages are the most versatile job in the FF series, not only because of the vast potential of enemy skills, but because they are so open to interpretation. Unlike other jobs, they are not pigeon holed into a set roll, or even an iconic look or weapon. Blue Mages have been super heroes and Arabian knights, frog people and beasts. They've used swords, guns, whips and rods. The only consistency throughout the series is that Blue Mages learn skills from enemies. More so than any other job, Blue Mage can be made to fit any role the developers decide to put it in.
