If you want to DPS, you can go Arcanist until you unlock SCH and piggy back off the healer queue. SMN and SCH both share ACN for levels. Although SCH isn't very fun to play atm as the job is now more or less designed around a level 68 trait and a level 70 ability as well as all of its aetheflow abilities. Otherwise it's just Ruin + Energy Drain / Physick spam thanks to a few nerfs here and there.

Personally, I would recommend CNJ/WHM until you unlock AST. I think AST is more fun because of card management, but you can't get it till Heavensward.

If you are looking for the best Healer DPS, WHM has the best damage of the 3 healers.

AST brings party-wide buffs via their cards.

I would definitely recommend Astrologian. We're very strong healers, especially right now. I am sure sometime in the future we'll be seeing nerfs, but I don't think those will really affect anything pre-70 too much. The only "complexity" to Astrologians is their card system. I say "complexity" because when you start off as an Astrologian, it can be a bit difficult to adjust to: what the card does, what the Royal Road effect is, when/who to use the card (on). By level 40, however, you should have that down to a science without even realizing it. Astrologian is -- by far -- my favorite job in the game at the moment, Red Mage pulling in for a close second. There are several guides online that can help acquaint you with the Astrologian and all of their tricks of the trade. They received negligible nerfs and some fairly massive buffs coming into Stormblood, so any pre-SB guides you may find will be more-or-less accurate (potency notwithstanding).

I depends on what you want to play, be it SCH or WHM, as you can't start AST until you reach level 50 and advance the MSQ enough to get to Ishgard.

SCH has a benefit in that you can run as a SMN for leveling and as a SCH for dungeons, but ARC is a strict DPS for the first 30 levels so you won't be able to actually queue as a healer until after 30. Past that point being able to swap to SMN makes leveling easier, though SMN is also very spammy in how it works prior to level 50 so it doesn't really help much in breaking the monotony of Ruin/Stone spam.

CNJ-WHM is straight healer all the way through, though this means for field and MSQ you will be mostly spamming stone.

Once you unlock it you can switch to AST if you prefer, and they as a job start at level 30. They also play identical to WHMs for most of the leveling process.

If you're looking for easy, I'd suggest whm. They just are just straight heals. No cards to manage, no fairy manage and position. Only thing you really need to manage are your personal buffs/whatever skills you choose from the cross role pool.

Conjuror/White Mage is the way to go then. It's the most straightforward to pick up and heal with because there isn't extra stuff to juggle (cards), and you don't have to deal with the pet sometimes doing what you want and sometimes not. Also has enough healing tools and output to get the job done reliably.

Just don't forget to pick your role actions. There's really important stuff in there like Swiftcast, Esuna, and Lucid Dreaming.
